Bar Manager

Edmund “Ed” Parowski serves as the Bar Manager at Mizu. Born in New Jersey and raised in Bavaria, Germany, Ed found his way to the restaurant industry after his time with the military ended, getting his start at a local sports bar in West LaFayette, Indiana. It was there he identified his interest and love for crafting libations that any guest and palate could enjoy. Over the past 10 years, Ed has worked in over 30 restaurants and bars across the country, growing his deep understanding of how to create a celebrated cocktail menu while also offering a memorable experience to each guest. 

At Mizu, Ed crafts a beverage program focused on bright, easy-drinking libations using Japanese spirits and seasonal ingredients, complementing the restaurant’s cuisine and atmosphere. Ed is known for taking a newfashioned approach as he applies modern techniques to classic drinks, sources the best ingredients with sustainability in mind, and continuously explores new, unexpected spirits. 

In his free time, Ed enjoys cooking and trying new recipes, listening to punk rock, and researching his latest topic of interest.
